I made this for my boy the other day and he loved it. It’s really easy to do and you can even use up any leftover chicken from your Sunday roast. I like to do mine in a panini toaster just because it is super quick and convenient, although you can just cook them in a pan. (I will add some pictures when I next make them)
2 small tortillas
Small handful of cooked chicken, diced
1/2 Tomato, diced
Small handful cheddar cheese
Spread out the chicken and tomato over one of the tortillas, then sprinkle over the cheese. Place the second tortilla on top and press down lightly.
As I use a panini press I cut mine in half at this point and then cook each half off one by one. If you are using a pan you can leave it whole to cook but you will need to flip over half way through cooking.
Once the cheese is nicely melted, carefully move onto a chopping board, cut into wedges and it’s done! Make sure you let it cool before serving though as the cheese will be very hot.
